CARROT HALWA


Ingredients:

2 cups shredded carrots
2 cups milk
1 cup ghee
1/4 cup sugar
1/2 teaspoon cardamom powder
chopped roasted cashew nuts (To garnish)

PROCEDURE

1. Grate the carrots.
2. In a kadai, add all of the grated carrots
3. Pour the milk.
4. Stir the grated carrots and milk and keep the kadai on the stove top.
5.Cook this mixture on a low to medium flame. the milk will froth and start reducing slowly and slowly.
 (In order to avoid the milk coming out of the kadai keep a long serving spoon )
6. Keep on stirring this halwa mixture often.
7. Once the mixture has reduced in quantity add the ghee/clarified butter.
8. Now add the almonds and cardomom powder
9. Stir continuously on a low flame till the mixture becomes thick. Now add the cashews and golden raisins.
10. Continue to stir  till the whole mixture becomes dry.
11. Your yummy gajar halwa is ready to serve
