puran poli for ugadi

Ugadi is the new year celebration for the people of the Deccan region. The term Ugadi is derived from the Sanskrit word 'Yugadi' where 'Yug' means age and 'Adi' means beginn  ing.

             




Ingredients

For the filling

Coconut ( grated ) - 2 cups
Jaggery ( powdered ) - 2 cups
Rice flour - 2 tsp
Cardamom - 2

For the outer layer

Milk - 2 tsp
Semolina / chirtoti rava - 2 cups
Maida - 6 tsp
Oil - as needed

Method



For filling

1. Grind coconut to a paste with water.
2. Mix jaggery with a tablespoon of water in a vessel and boil to prepare a syrup.
3. Add coconut, rice flour and mix well.
4. Powder cardamom and add to the contents.
5. When the water is evaporated and the contents thick, remove the vessel from the stove and allow to cool.

For outer layer

6. Mix rava, maida, oil, milk in a vessel to form a dough.
7. If needed, add water and set aside for half an hour.

8. Take small portions of the dough and roll into circles.
9. Place a little filling in the centre, cover and roll into a chappathi.
10. Heat a flat frying pan.
11. Add the chappathi and cook on both sides
