Bhendi chi bhaji is a traditional Maharashrian dish.
In this dish i have made a small twist of adding baby corns along with the bhendis and renamed it as Bhendi aur corn chi bhaji.
This is a simple ,easy and a healthy dish.
INDREDIENTS
- Chopped bhendi 1 cup
- chopped corn 1 cup
- onions big chopped 1
- oil
- till seeds 2 spoons
- ground nuts 3 spoons
- jeera
- celantro
- hing
- chilly powder
- ginger garlic paste
- curry leaves
- curry powder
- salt
- coriander powder
- maida 2 to 3 spoons
- turmeric powder
METHOD
- Take a plate and mix maida, salt, turmeric powder, chilly powder along with the chopped baby corn . Mix well sprinkling little water and keep it ready.
- Take a pan pour oil once it becomes hot add the baby corns and fry well.
- Transfer it to a plate with a paper towel inorder to observe extra oil.
- Take a pan dry roast t ill seeds .
- Remove the till seeds and now add the ground nuts and dry roast again.
Transfer it to a plate.
- Now take a small mixer and make it into a fine powder
- Now take a pan add oil put jeera ,hing, curry leaves and fry well.
- Add the chopped onions and fry till it becomes brown.
- Add ginger garlic paste and quick stir it.
- Now add the chopped bhendis along with the masala powders mentioned.( DO NOT ADD the fried till and groundnut powder now)
- Allow the bhendis to cook completely.
- After some time check the bhendis whether it has completely cooked.
- Once it has cooked completely add the fried corn and fry for 2 mins and now add the till and groundnut powder and fry for a another 2 mins.
- Mix it well transfer it to a serving bowl and garnish some celantro.
- Enjoy dis with hot phulkas.
