Iyer style sepangazhangu roast is one of our favourite family dish. This is our all time favourite dish for my hubby when combined with manathakali vathakozhmbu ,sepangazhangu roast and sutta appalam.
INGREDIENTS
sepangzhangu ( In English it is called as colacassia)
oil
urad dhal 1 spoon
curry leaves
asafoetida
red chilly powder 1 tsp
turmeric powder a pinch
salt
1 tsp rice flour.
Mustard seeds
PROCEDURE
Boil the sepangazhangu remove the skin ,chop and keep it ready.
Take a pan pour some oil , add mustard seeds, urad dhal,curry leaves and fry till the dhal changes its colour.
Take a small cup add all the dry ingredients powders.( red chilly powder,turmeric,hing,salt mix well )
Add little water to the above mixture and pour it into the frying pan.
Now add the chopped sepangazhangu and give it a quick mix till all the ingredients are completely coated all over the veggies.
Allow it to cook for 10 to 15 mins in a sim flame .Take 1 spoon of rice flour and add it to the vegetable.
Now once gain cook for minimum 10 mins in a slow flame .Now remove it from the pan and serve hot .
